s390/configs: Update defconfigs

The usual defconfig updates. Notable changes:

- Enable ZONE_DEVICE, and with that DEV_DAX, FS_DAX, and FUSE_DAX
- Enable CRYPTO_SELFTESTS_FULL for debug_defconfig
- Enable CRASH_DM_CRYPT
- Disable legacy IP_NF_FILTER
