Remove global skip for redefine-stress

Fix up knownfailures lists for redefine stress so that it can run
again. This involves using test_patterns to skip anything using
invoke-custom/polymorphic or new dex features.

We also added in skips for tests that have failed previously and need
to be investigated more.

Test: ./test.py --host -j50 --redefine-stress
