refactor: rename project artifacts to follow spring-ai naming convention 

- Rename mcp-core to spring-ai-mcp-core
- Rename mcp-spring to spring-ai-mcp-spring
- Rename mcp-spring-boot to spring-ai-mcp-spring-boot
- Rename parent artifact from mcp-parent to spring-ai-mcp
- Remove unused spring-ai.version property
